Ingredients :
1 sole
60 g butter
1 shallot (finely chopped)
some minced parsley
1 glass white wine
some breadcrumbs
salt, pepper

Sole with white wine sauce
Preparation:
Melt the butter in a frying pan.
Add salt, pepper, the shallot and the parsley.
Sprinkle over the glass of white wine and the breadcrumbs.
Add small pieces of fresh butter.
Poach the sole in salted boiled water for 10 minutes.
Then in a dish ready to be placed in the oven: put the sole with the sauce on top.
Leave your dish 10 minutes in the oven at thermostat 7 (210°C / 410°F).
