Ingredients :
60 gr fresh butter
1 soupspoon flour
Half a glass of boiling milk
4 egg yolks
4 stiffly beaten egg whites
150 gr grated cheese (Comté)
Cooking2000's advice:
Shoud be eaten piping hot.

Cheese Soufflé
Preparation:
Melt the butter in a pan with 1 soupspoon of flour.
When the 2 ingredients are smoothly mixed, add half a glass of boiling milk.
Remove the mixture from the heat when it sticks to your spoon.
Add to the mixture 4 egg yolks, one by one.
Then fold in 4 stiffly beaten egg whites.
To finish add the 150 gr of grated cheese (Comté).
Preheat the oven at thermostat 7 (210°C / 410°F).
Butter a dish for the soufflé.
Cook in the oven for 15 – 20 minutes.
