Ingredients :

• 200 g stale bread
• 1 pinch of salt
• 8 eggs yolk
• 100 g butter
• 4 tablespoons double cream (heavy cream)

Preparation:


• Soak during 2 hours in cold water the slices of stale bread.
• When the bread is softened enough, cook it slowly (low heat) during 90 minutes with a large pinch of salt.


• Strain and add to these mixture the egg yolk and the butter.
• You might want to add the tablespoons of double cream (heavy cream) in the last minute.
