Ingredients :
200 g stale bread
1 pinch of salt
8 eggs yolk
100 g butter
4 tablespoons double cream (heavy cream)

Preparation:
Soak during 2 hours in cold water the slices of stale bread.
When the bread is softened enough, cook it slowly (low heat) during 90 minutes with a large pinch of salt.
Strain and add to these mixture the egg yolk and the butter.
You might want to add the tablespoons of double cream (heavy cream) in the last minute.
