Ingredients :

• 50 g butter
• 3 cl olive oil
• 2 shallots, peeled and chopped
• 1 garlic clove, peeled and crushed
• 1 pinch of salt
• 4 eggs
• 150 g double cream (heavy cream)
• 100 g grated Gruyère cheese (or Comté cheese)
• 4 medium potatoes, peeled

Preparation:


• Melt 25 g butter with the oil in a pan, add shallots and garlic, fry gently.
• Transfer to a bowl, add the eggs and beat them.
• Preheat the oven at thermostat 7 (210°C / 410°F).
• Stir in the cream, Gruyère cheese (or again, Comté cheese is much better).
• Add salt and pepper.
• Grate the potatoes, squeeze them to extract as much moisture as possible, then dry with paper.
• Stir in the egg mixture. Put 25 gr butter in the dish (should be ovenproof) and heat in a preheated oven until melted and very hot.
• Pour in the potato and egg mixture, then cook in the oven for 30 minutes.
