Ingredients :
50 g butter
3 cl olive oil
2 shallots, peeled and chopped
1 garlic clove, peeled and crushed
1 pinch of salt
4 eggs
150 g double cream (heavy cream)
100 g grated Gruyère cheese (or Comté cheese)
4 medium potatoes, peeled

Egg and grated potato gratin
Preparation:
Melt 25 g butter with the oil in a pan, add shallots and garlic, fry gently.
Transfer to a bowl, add the eggs and beat them.
Preheat the oven at thermostat 7 (210°C / 410°F).
Stir in the cream, Gruyère cheese (or again, Comté cheese is much better).
Add salt and pepper.
Grate the potatoes, squeeze them to extract as much moisture as possible, then dry with paper.
Stir in the egg mixture. Put 25 gr butter in the dish (should be ovenproof) and heat in a preheated oven until melted and very hot.
Pour in the potato and egg mixture, then cook in the oven for 30 minutes.
